Brazilian Moqueca
Ingredients:
1 tablespoon olive oil
1 yellow onion, thinly sliced
1 teaspoon salt, plus more to taste
2 tablespoons tomato paste
4 cloves minced garlic
2 teaspoons paprika
1 teaspoon ground cumin
cayenne pepper to taste
1 can (14-oz) coconut milk (not low fat!)
1 teaspoon soy sauce
1 1/2 cup sliced assorted sweet and/or hot peppers
1/4 cup chopped green onion
1 1/2 pounds sea bass, or other firm white fish, cut into chunks
1/4 cup chopped cilantro leaves
2 tablespoons freshly squeezed lime juice
serve with rice
